Cream of Crab Soup
Cream of Crab is the only crab soup served at Bella Note, and only comes in bowl sizes. The soup reviewed was being given away at the Crab Soup Cook-off after the competition. Soup is a classic mix of cream, sherry, and crab meat. Old Bay was on hand so you could add as much or as little as you wanted.
The broth is thick and creamy, a perfect blend that isn't too thin or too thick. Lots and lots of crab meat throughout, so much that you get a good amount of crab in every bite. Sherry adds some nice balance and complexity to the mix.
The flavor of this soup is unbelievable. Crab flavor is nice and sweet, in good sized chunks, and adds a nice aroma to the soup. The broth is nice and fresh, with a good creamy flavor -- none of that flour or corn starch off flavors here! While the stop stands alone, some Old Bay is a nice addition. Just don't overdo it, or you'll miss out on the perfect balance of flavors!
