Yin & Yang Crab Soup
The Yin and Yang is comprised of half Maryland Crab soup, half Cream of Crab soup -- for those of us who are undecided as to which way we want to go! The Maryland Crab is a rich, spicy crab with beef broth loaded with bacon, celery, onion, peppers, tomatoes, potatoes, cabbage, and chunks of lump blue crab meat. The Cream of Crab is thick and creamy, loaded with sherry and lump crabmeat.
The Maryland Crab is sweet and bacony (if that's a word. If not, then we're making it one!). While the spicing is nice and the vegetables are fresh, the soup ends up being a little more on the brothy side. The Cream of Crab is smooth and creamy, with some crab meat inside. In our bowl, there seemed to be more crab in the Maryland crab than in the Cream of Crab.
Together, they work very well. The crab lumps overall aren't too big, but they do make themselves noticeable. As one would expect from Maryland blue crab, the crab meat has some sweet flavor to it. While we still think the Maryland Crab could use a few more additional ingredients, one wouldn't want it to be too chunky when being mixed with the Cream of Crab. But we'd still like to see a few more. Despite that, this is a very tasty soup and a good indicator of what to expect from the soups on their own.
