Maryland Crab Soup
The Maryland Crab soup is a vegetable soup made with a spicy crab tomato base, loaded with carrots, green beans, tomatoes, onions, and potatoes.
Let's not beat around the bush -- there are nice, large hunks of crab in this soup! The soup may be made with a crab stock, but the meat is added in as it is served. Really good ratio of crab to vegetables.
The crab has an awesome flavor to it -- nice and sweet, certainly won't disappoint. The vegetables are a bit mushy, and as a result, have lost some of their fresh flavor (but one can say that flavor went into the broth). There is still some good flavor to the vegetables, but the "snap" isn't there. Lots of crab spice to the broth, maybe a tad bit too much. Soup ends up being kind of salty, which starts to overpower the crab meat. Town down the spice a notch, and that will make this awesome soup even better!
It should be noted that the cheese topped cornbread that comes with the soup is sweet and counteracts the saltiness of the soup nicely.
