Cream of Crab Soup
The Cream of Crab soup is your classic recipe -- creamy and rich, with a touch of spice.
Large chunks of crab are added to the soup for serving. The soup is on the thick and pasty side of cream soups. Some spice comes through, but is mostly just pepper. The predominant flavors are flour and pepper, even when you have some crab in your spoon. When singled out, the crab has a really sweet flavor.
The mild taste of the soup works when you have some crab in there. But by itself, the soup is very one note and uninspiring. The pepper flavor persists on the back end once you're done, leaving a lasting memory. While not the best soup we've had, it also isn't the worst. If we were in the kitchen, we would have dialed the spice back, and have not made the broth so thick. At least they used flavorful crab!

Maryland Crab Soup
The Maryland Crab Soup is made with a hearty tomato base, spicy sausage, jumbo lumps of crab, and vegetables --Lima beans, corn, tomatoes. Available in cups and bowls.
They weren't kidding about jumbo lumps of crab! Visible without ever putting a spoon in the cup. Nice balance of broth to ingredients in a very hearty soup. The crab meat has some flavor to it, but not sweet like Maryland Blue crab. The sausage adds a wonderful element to the flavor, although the soup itself is very spicy. Spice lingers on back palate, reminding you of the flavor party in your mouth. While we would prefer the crab meat to have a little more flavor and for ther to be a little less spice, we thought the soup was very good.
