Maryland Crab Soup
The Green Turtle's Maryland Crab Soup is a tomato-based broth filled with carrots, tomato, green beans, corn, peas, lima beans, onions, and lump crab meat.
Broth has a definite tomato taste with a salty bite. Crab meat has a little bit of flavor to it, and is added after the soup is served in broken pieces. Vegetables taste somewhat fresh, but don't have an overly appealing flavor or texture.
Overall, the soup is just too salty. The broth doesn't taste like a crab stock, and with the crab meat being added in afterwards, none of the crab flavor (what little of it there is) that makes a crab soup combines with the sauce. Vegetables could be a little fresher and have some snap to them. Less broth and more contents would be nice as well. All told, this is really just a mediocre tomato soup with some crab added to it.
